This is best handled through user training as there is no standard way to restrict this feature which basically is very handy otherwise. Though this is not a recommended customization but if the situation demands, may be you can try to write custom filter (Approval Rule) that filters out all approval nodes that are not defaulted from the template.

We have already designed that but in that case we could miss some approval flows. Any way thank you.
By the way, do you know how I could report on pending approvals with more than 10 days ?
I know on how to report on average duration of complete completed approvals, but we want to identify all approvers who takes more than x days to approve.
